So here's another recipe from my textbook, egg-less with simple ingredients. And pretty healthy I guess. Plus, check out a bonus recipe below! Feel free to mix in raisins, for something a little fruitier.
Oatmeal Crisps
Ingredients
50g rolled oats
100g flour
150 ml milk
2 teaspoons baking powder
2 tablespoons honey
1/2 tsp cinnamon powder
75g cold butter, cut into small pieces
Preheat oven to 190 degrees C.
In mixing bowl, mix oats with flour,
baking powder and cinnamon.
Rub in butter until mixture resembles breadcrumbs.
Stir in honey and 120 ml milk to form soft dough.
Grease baking tin.
Scoop 2 tablespoons of the mixture into your flour hands.
Pat mixture into a round shape.
Place on the baking tin about 2 cm apart.
Brush the top of the shaped mixtures with the remaining milk.
Bake for 12-15 minutes.
The next recipe is sort of modified. Again my dad was watching Jamie Oliver on TV. So he tried one of his recipe's at home and it was actually pretty good. As I said, I modified it a little. Not sure what it's called though so I'll just call it...
Peach-IceCream-Crumble
Ingredients
Few Digestive Biscuits
Vanilla Ice Cream
Canned Peaches
The process is super simple.
Basically, it's 3-layers.
First, crumble 1 or 2 Digestive Biscuits into
the base of the glass.
(No need to be in perfect pieces)
Next layer on the peaches, 2 or 3 pieces.
And finally, ice cream with
chocolate shavings on top for decor.
Okay in this case, I piled on the ice cream first, then the peach. And hey, I'm not a professional photographer so I know the photos a bit grainy. I thought it would look nicer in a jar but I guess- Anyway, the real thing had canned cherries not peaches (but it still works), and Jamie poured a little black coffee on it. That's right, over everything. So I guess you could try that too.
One more thing guys, before you leave. There's this book that I recently read, Bittersweet by Sarah Ockler. It's not quite about baking but its REALLY cool. To read more, CLICK HERE. Anyway, at the beginning of the chapters there are some... how do I put it... Examples/Ideas for cupcakes. No recipe just the description.
Dark chocolate cupcakes
with red peppermint mascarpone icing,
edged with chocolate and crushed candy canes
Well, those are the first two, there'll be more in the next few posts. I tried to match the pictures to the description but I'm pretty sure you can get the picture. And, I'm sure you can get the individual recipes for the cupcakes and icing separately. Good luck, and bye for now!
